Niamh Leahy
Chief Operating Officer
Niamh grew up in Mocklershill, on the home farm and has great memories of herding cattle and milking cows.
Niamh got a degree in Marketing and Management in 2012 and worked in the banking industry before doing a Masters in Education in Trinity College Dublin in 2016. She has worked in the Irish Highschool system, teaching Accounting, ever since.
The draw to take part in a new venture has always been strong and Niamh now herself working on Celtic Euro Foods with her father Paul doing something close to her heart.

Paul’s farming background roots run deep ,beginning on his family’s dairy farm in Mocklershill, at the heart of County Tipperary’s Golden Vale. Renowned for its rich land and lush grass, this region has long been the backbone of Ireland’s dairy tradition. Paul worked closely on the farm and with local cooperatives, gaining a lifetime of hands-on knowledge in dairy production. Alongside his agricultural expertise, Paul has also led and directed a variety of companies, bringing with him many years of valuable business experience. The unique blend of farming heritage and commercial insight shapes the work he does today.

Don Smail
Vice President - Business Development
Don, our Head of Sales and Business Development, is based in the United States, providing a bridge between markets on both sides of the Atlantic. With a wealth of experience in driving business growth, he brings clarity, strategy, and impact to every client engagement.
Don has worked in California local government on industrial development, job creation and small business assistance since 1985. He has helped develop several public-private projects; and has successfully promoted business partnerships between cities, universities, the private sector and the agriculture industry. Prior to his government service, he managed air freight and trucking companies in the Los Angeles area. Expertise includes import-export logistics, managing US Customs clearance, water-wise agriculture and renewable energy resource development. Education includes a Bachelor’s Degree in Government and International Relations from the University of Notre Dame, and a Masters in Community Planning from the University of Rhode Island.
